Step 1 - white ceramic unit: the blade is sharpened. Pass the knife evenly through the sharpener about ten times. A special feature of the NEW EDGE is that you can slide the blade back and forth – without additional pressure, using only the weight of the knife.
Then carefully check the edge – for example, with a paper test or a cautious fingernail test.
Step 2 / orange ceramic unit:the final honing of the edge is performed. Pass the knife through the second guide again about ten times with light pressure, using a back-and-forth motion, to refine the sharpening surface.
The honing leather impregnated with 9 µm diamond particlesallows for honing and polishing the edge. This helps maintain an extremely thin, razor-sharp blade. While sharpening stones are mainly used for significant wear, the honing leather is ideal for regular blade maintenance.
For honing on the leather, pull the knife backward at a slightly shallower angle (approx. 12–13°), using slow and controlled movements. Light pressure and about 5–10 passes per side are sufficient.
It is recommended to replace the ceramic stones after approximately 500 sharpenings to ensure consistent performance.
