The capers, Alcaparrones, are cleaned and drained, and their texture is soft and fleshy. Green in color, these large capers have a fresh and typical flavor and aroma, but are very different from classic tartar capers. They are crunchy and slightly tangy flowers that can be enjoyed as an appetizer like a gherkin. They are also perfect for salads, tartar sauces, tapenades, etc. This condiment, produced from the flower buds of the caper bush, adds character to your culinary preparations. Skate can only be enjoyed with an Alcaparron caper sauce! Try your hand at the recipe for mascarpone mille-feuille with tuna and capers, a memorable delight for your guests!
